December already

I can't believe it's December and that we're still not back in Colorado. Oh do I miss it. It's been tough living without our belongings and our sweet kitties. Thankful to have our dog and bunny with us though. It's not easy living in someone else's house with someone else's stuff. Our son is having difficult times with being out here too. He misses his friends and school so much. He does stay in contact with his friends, but it's not the same. I know how he feels, I miss my friends too!

My grandmother is still kicking. She has her ups and downs. She's also back to not eating much lately. There's so much I wish I could just sit and talk about, I have so many stories, but I won't. Tonight she was very itchy again. It was back breaking trying to roll her over with one arm and scratching her back with my other hand. No amount of helping her to scratch seems to alleviate the feeling for her. :\ She was taking anti-itch pills, but I guess they don't work anymore. She always thanks us for coming to visit, even if we don't talk much. There isn't a lot to talk about since we see her almost daily. We've started taking one or two days off a week... as a family, we need the breaks. I am thankful to get to spend this time with her, and that she gets to see the kids.

I love homeschooling the kids. Sometimes it's overwhelming and frustrating. Sometimes it's fun and rewarding. But it's always a blessing. I like our homeschool group. All of the families are quite different, which I wasn't really expecting, but they are all great in their own ways.

We don't have anything Christmasy here. So we went to the dollar store and got a few supplies to make things. We're making paper chains from wrapping paper and plastic candy canes covered in fabric. I found flour and baking soda at the DS for making ornaments (no, we don't have a tree yet). I made baking soda/cornstarch "dough" today. The kids had fun cutting out ornaments from the dough and using some to sculpt with. Next will be salt dough, doctored up to make gingers. I saved lots of crafting ingredients from grams pantry when we moved in here. Everything else food related got the boot, as it was all pretty old.

I have not forgotten about my PIFs. I've had two packages sitting here since October/November, waiting to be mailed. Hubby still has not been able to get a job, it is so disheartening. Only by the grace of God do we survive out here. I do get some help with money, but it doesn't come consistently which makes things hard. Most of it goes to gas and food and keeping the kids educated. Spending a few bucks at the dollar store was a luxury! Of course later I felt bad, because we didn't use the money for something we actually needed. But gosh, it's Christmas time and we want it to look Christmasy! Trying to stay out of depression's grip here...

The view from my great uncle's 80th birthday party in Modjeska Canyon. This is their friend's property. They have horses, llamas, a goat, and a variety of dogs. Anabelle loved it there. ;) Grams got to go too! She had been out a couple of times in a wheelchair before the day of the party (what a blessing!) So we had some help and got her dressed up nice and up to the party (around the corner from where she lives.) She didn't stay too long, but it was awesome that she got to go at all!

Hubby and I used to come here before we even had kids. Be careful of the geese, they are MEAN, always have been, no pics of them LOL. (Not the Canadian variety.)

Happy Fall

I took this picture awhile ago when my grandmother's fall flowers were looking lovely.

Not much exciting going on around here. Today the kids are going to carve one of their pumpkins. We got them two each this year.

Justin has decided to be Mario for Halloween. Anabelle wanted to be a purple princess, so we got her a Rapunzel costume, which she will keep out all year for dress up. :)

We don't get trick-or-treaters in our little private neighborhood, so all four of us will be out roaming another neighborhood together.

Checking in

We're in California currently. Everything we own is being stored in Colorado. Our cats are staying with a friend of the family. Our doggy (Bailey) and bunny are with us for now.

Nutmeg (our pom-chi) loves her new home with friends in Colorado. It's been hard not having her around anymore, but she's so young and has easily adapted into her knew home. She has two kids to love and a new human mommy.

Not sure when we will return to CO but that is where we want to be. Justin and Anabelle's birthdays are coming up soon too!

We came out here for three weeks on July 3rd. My grams was in the hospital and was doing poorly, everyone thought it was the end. She is out of the hospital and we visit her almost daily (we occasionally miss a day a couple times a month.) She's not living at home, but in a home for older folks who can't live on their own anymore. Not a large facility, she refused to be in one of those and I don't blame her. We are staying at her home. Hubby is planning to get a job. I will be homeschooling the kids.

We don't have internet at the house. Trying to get it there, but don't know when that will happen. Everyone wants a year or two long contract, and I will not sign up for those because they aren't in CO so I can't take the service with us when we go back home. We need internet for homeschooling, so we haven't been able to fully dive into that yet.

It's really hot here. Grams house has a pool so the kids will swim most days. Gary and I also go in here and there, but the kids enjoy it the most.

We were treated to a trip to Disneyland this past Sunday. The kids had lots of fun. Didn't make it on all the rides and we didn't make it over to California Adventure either. But we still enjoyed ourselves. I can't believe how expensive it is to go there anymore. (I think the worst is the overpriced food! Yuck! You'd think it would taste better at those prices.)

I have been taking pictures. But my old laptop is hard to lug around to the library. The monitor has to have something behind it to hold it up, and it's rare that I can find an open spot to use it.

So much more to say, but not the time to say it. lol.

Please be praying for our family and for my grandma. Gram's quality of life is difficult for her. Even though it would mean we've lost her here on earth, I just wish God would take her home with Him. I would not want to live this way when the time comes. It's hard to see her so miserable. (She's thankfully not dealing with much physical pain, but everything that has lead her here is a different story.)

Moving & Prayers Needed


We have to move out of our rental house. Today is supposed to be our last day, however we need a couple more days to finish up. Most everything we own is in storage now. Thanks to some wonderful friends for all their help, it was a big chore.

Nutmeg went to a new home with a friend and her two kids. It was sad to let her go, lots of tears have been shed. Nutmeg just turned 3 yrs old and will be easier to transition into a new home than our other pets. (I hope!)

We do not have a new place to live yet. So I guess we are homeless. My husband has been trying to get us into an apartment but hasn't had any luck yet. There are currently no homes for rent that fit our family. A couple of neighbors have offered to let us stay a few days if we need to.

The kids and I are going to California for awhile. Please pray for my Grandma, she is not doing well, we are going out to see her. Gary is staying here to work and try to find us a place to live. We'll be boarding our dog and cats, and hoping a friend can take care of our rabbit and lone fish.

Please pray for our family, it's been an extremely rough couple of weeks, and we need a roof over heads.

Lazy Elk & Stuff

Found these lazy ladies on my way home from school last week. I liked how differently each of them were laying. The first is my favorite. Talk about relaxed!








Took the URL off my blog. www.blessingsinthecountry.com It's due $ in a month, but I can't renew it. I'll see if I can set up a redirect till it expires, but I'm really not worried about it.

Today is supposed to be 79 degrees. It's overcast and I'm wondering if it's going to rain.

I made my favorite Amish White Bread with whole wheat pastry flour. Turns out I don't like it made with wheat. I also made another wheat bread in the bread-maker, but it came out awful! I know I did one of the settings wrong, but I wasn't sure which to use. It was meant to be a sandwich bread. I rarely use the machine but someone posted it as a bread-maker recipe, so thought I'd dust off my machine and try it.

Sunny Sunday

We've had two sunny NICE days in a row! Welcome Spring! I have missed you so much!

I jinxed us by talking about spring snow in my previous post. Winter was jealous and decided to stick around longer.

I love brewing tea in the sun. Justin chose tangerine-orange (big red jar). Anabelle chose sugar plum (small red jar.) I like to keep regular ole Lipton (or Luzianne) for all of us to drink.

Happy Spring!

I'm so glad spring is here! It can still snow through May, but at least it doesn't turn into ice anymore with the temps rising.

Hopefully soon we'll be getting some veggies going. So far we want to plant carrots, tomatoes and parsley. Justin wants to plant watermelon or corn, I said we could try, we haven't had luck with watermelon before, and we haven't tried corn yet.

Twinkle is sitting next to me purring and nudging my hand. Someone wants attention.

Short post. Using my son's MacBook which I am not used to, but it's the only one that is getting the wifi signal from the school, which comes and goes as it pleases. I can't use Facebook and it blocks a lot of other sites. The HP laptop has issues and refuses to work properly. Gosh I miss our own internet! lol

I am off to school for my hour of volunteering today. Yesterday the kids were pretty good. Lately they seem to be bouncing off the walls and being a bit difficult to handle. Hoping today they are sweet little angels! (hahaha)

My son Justin is playing basketball again this year for 6th grade. He really likes the coach this year. Coach is actually a director at our rec center, but nobody was volunteering to coach my son's team, so he stepped in. I'm glad he did, he is great! (Sorry no pic of him. lol.) Justin is the one with the glasses and his arm in front of the Ref.

Grace can be Amazing

Just some pics I've taken lately. Not much going on around here.

Nutmeg and Bailey locked in our bedroom. A friend was over fixing a broken heater pipe and we didn't want them barking at him while he was here. The big dog is loving to everyone, but the little one is not.



Twinkle in the basket we got him at the thrift store. Kitties love baskets!

Impossible Pumpkin Pie



Impossible Pumpkin Pie (no crust!)

2 cups pumpkin puree (or one 16oz can)
1 can evaporated milk
2 TBL butter (softened)
2 tsp vanilla
2 eggs
3/4 cup sugar
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 cup quick mix (or Bisquick)

In your blender add: pumpkin, evaporated milk, butter, vanilla, and eggs. Blend well. Add the sugar and spices. Blend well. Add the quick mix last. Blend well.

Pour mixture into a greased pie pan. (I grease with organic or grass-fed butter.)

Bake in a pre-heated 350F degree oven for 50-55 minutes or until you can pull a clean knife out while testing.

Let cool before serving. Or refrigerate overnight.

*If you do not have a large blender (ingredients will overflow in a small one), you can use a handheld mixer, stand mixer, do it by hand, whatever. ;)

I have read that this recipe has been on the Bisquick box. I found the recipe here.

This pie is pretty good! I am super picky about crust flavor, so no crust is awesome. I will say that this pie could use a little more kick in the spices. Next time I will add 1/8 - 1/4 tsp ground clove and see if that helps.

I know it's not autumn right now, but pumpkin is good for you! (The evaporated milk is not, oops.) I love that I can whip this up super quick and pop it in the oven for dessert.



This pie holds up great with no crust. It also tastes even better the next day. (refrigerated).

New Bikes

For Christmas our children got bikes! Justin is an experienced rider, but Anabelle is not. She hasn't had a bicycle her size since she grew out of her toddler bike with training wheels years ago.

We took the kids to our elementary school parking lot, a nice *flat*, *no cars driving through* place to help Anabelle learn to ride. Justin's bike also needed gear adjustments and to make sure everything was working right. (His was used, came with new tires, but needed a little work done on it before it could be ridden. Thankfully hubby knows how to do that stuff!) And yes, they will be getting helmets!

Today I received a box from Trace! Every day leading up to Christmas she posted questions and trivia for all to answer. It was a lot of fun visiting her blog to participate.
